Ingredients
1 medium-sized pumpkin, peeled and cut into medium-sized pieces
Olive oil (for roasting)
10-15 grams butter
2 tsp curry powder
3 tsp dried garlic powder / 2 fresh garlic
1 small tsp black pepper
1 can coconut milk
Optional: turmeric, chilli powder (for extra spice), carrots (for sweetness)
Steps
1. Peel and cut the pumpkin into medium-sized pieces.
2. In a large pot, heat a little olive oil over low heat. Add the pumpkin pieces and roast for about 5-10 minutes.
3. Add enough boiled water to the pot to just half-cover the pumpkin. Cook until the pumpkin is tender
4. Once the pumpkin is tender, use a blender to puree it until smooth.
5. In a separate pot, melt the butter over low heat. Add the curry powder and sauté for about 30 seconds, being careful not to burn the spices
6. Add the dried garlic powder and black pepper to the butter and curry mixture. Continue to sauté gently.
7. Pour in the coconut milk, mixing well with the spice mixture.
8. Once the pumpkin puree is warm, combine it with the coconut milk and spice mixture in the same pot.
9. Cook everything together for another 10 minutes, stirring occasionally.
10. Optional: Add turmeric and chilli powder for extra spice, and/or carrots for additional sweetness.
